The duck giblets are off

In France four people have died and 22 more came down with severe vomiting after eating Perigord salad at a retirement home, close to Toulouse. The home is run by a company called Korian, which claims to have the biggest network of such homes in Europe, with about 78,000 beds in total.

A standard recipe for Perigod salad (or Salad Périgourdine) has crisp lettuces, a little walnut oil, some bread cut into small cubes, chopped walnuts, a little wine vinegar, and cooked and sliced duck giblets.
